BEEF FOOT SOUP

Ingredients :

1 small beef foot
6 cups of water
3 cups of homeny
2 cups of chick-pea
4 small garlic cloves
1 read onion
1 pepper
2 white onions
salt, pepper (spice), cumin and coriander
2 cups of milk

Preparation :

Put the hominy and chick-peas in water one day before. Clean the beef foot very well. It should look white before cooking. Put the homeny, peas and cow foot in a pot. Add the water, garlic, onions, pepper, salt and cumin. Then cook the ingredients on a low fire. Cook it for about 3 hours. After that, add the milk.

Finally eat it with a little coriander and onions on top.

CHICKEN AND VEGETABLE SOUP

Ingredients :

2 pounds chicken 4 quarts of water, 1/2 cup carrot pieces , 12 cup potato pieces1/2 cup celery, chopped, 12cups diced onion, 1 teaspoon salt, 1 bay leaf, 1/8 teaspoon parsley cut fine.

Preparation :

Cut the chicken into cubes and brown lightly. Mix the chicken with the rest of the ingredients and simmer for 2 hours. Remove the bones or strain. To the above stock add potatoes, carrots, onions, celery or other suitable vegetables and cook them in the stock until they are tender.

CUENCANIAN PEANUT SNACKS

Ingredients :
1 pound of peanut previously toasted and peeled
1 pound of sugar in dust
1 spoonful of vanilla essence
Preparation :
Leave the peanut in water during 12 hours. Drain it and pass it twice through the mill. Mix with the vanilla essence and add the sugar little by little until it becomes an easy dough to mold. Form little circles or figures and roll them through the sugar in dust.

CUSTARD CREAM

Ingredients :

2 gallons of milk
2 pounds of sugar
1 grated coconut
3 teaspoons of cinnamon

Preparation :

First, boil the milk on a low fire for 45 minutes.
Then pour the sugar in the milk.
Next add the coconut and the cinnamon and stir for 30
minutes.
Finally put it in a bowl.

Serve with cookies or bread.

We usually eat this for "Carnival"

FRIED POTATOE CAKES (LLAPINGACHOS)

Ingredients:

1 pound of potatoes
1 egg
salt
onion
cheese
butter or oil

Preparation :

First cook and mash the potatoes, then add the eggs and stir.
Next, make balls and put cheese in them.
Finally fry it with annatto.

p.s. this is a typical dish of Cuenca, you eat it with
guinea, baked pig, etc.

FRITADA (FRIED PORK MEAT)

Ingredients :

2 pounds of pork meat
4 cups of water
4 cloves of garlic
condiments (cumin, salt, pepper)

Preparation :

Cut the pork meat into small pieces. Put water,
garlic and condiments, in a pot. Then add the pork meat for 40
minutes.

You can serve this with corn, fried potatoe
cakes and salad (lettuce, onions, tomatoes).

GOAT STEW (its only the name, actually it´s lamb carbonades)

Ingredients :

2 pounds of chopped lamb meat
2 chopped onions
2 chopped green peppers
1/2 cup of finely chopped parsley
2 pounds of tomatoes
3 oranges
1 hot chili pepper
1 spoonful of annatto
1 crushed garlic clove
oil, salt, pepper and cumin.

Preparation:

First, put some oil in a frying pan. Then add the onion, pepper, parsley and
annatto. Wash the meat and dry it. Next spice the meat with salt, pepper, cumin and
crushed garlic. Add it to the pan. and brown it.
Blend the tomatoes, oranges before adding this juice to the meat in a pot. The
juice must cover the meat.
Cook until the sauce is thick.
Finally, taste the season before serving.

GREEN BANANA MEDALS (PATACONES)

Ingredients :

green banana
a cup of oil
frying pan
some salt

Preparation:

First you peal the green banana and cut it in thick slices of more or less 4 centimetres
Then you put oil in the frying pan until it is hot.
After that, you put slices in the frying pan.
Smash them, and fry them again.

Finally you serve and add salt.

GREEN BANANA PIE

Ingredients :

4 green big bananas
1/8 teaspoon pepper (spice)
1 teaspoon salt
11/2 teaspoon butter

Preparation :
Peel and cook green bananas. Mash them. Put the peper, salt and butter. Blend them. Pour half of the mixture in a pie pan, spread cheese on it. Next, put the rest of mashed green bananas on top. Finally, bake it about 20 minutes.

HUMITAS I

Ingredients:

-salt
-onion
-sugar
-corn
-butter
-milk
-anise

preparation
first you grind the corn with the onion, then add a little of salt, sugar,
the butter, the anise and a little of milk.

mix until we have a uniform dough. after that we put a spoonful of the dough
in the middle of the corn leaves and fold them.
finally we steam this in a special pot called "olla tamalera".we cook it for
approximately one hour.

HUMITAS II

Ingredients :

3 Corns
3 Tbs butter
2 Tbs grated cheese
1/2 Tsp salt
1/2 Tbs flour
2 eggs
9 corn leaves

Preparation:

First remove kernels and grind them. Melt butter in a frying
pan. Next, put melted butter, grouns corn, cheese, salt, flour and eggs in a
mixing bowl. Then mix with a wood spoon. Wash the corn leaves.

After that, place a spoonful of the mixture in the center of each leave. Fold it
over the mixture. Finally, put it in a pot and steam for 45 minutes.

JAM OF GUAYABAS

(Guayaba is a yellow tropical fruit, with pink jelly inside, it is very
delicious.)

Ingredients:

25 guayabas
4 cups of sugar
1/4 cup of lemon juice
Enough water

Preparation:

First, wash the guayabas, and cut each one in 4 parts. Then put them in a
pot with water and cook them, until the fruit is tender. After that, blend the
guayabas and sift them. This will now be reduced to 2 cups of jelly.
Mix the sugar, the guayaba jelly, and the lemon juice in a pot. Let it boil
for 5 to 8 minutes.

Serve with salted cookies and cheese.

MOTE PATA

Ingredients:

1 pound of pig meat cut in small pieces
1/2 pound of sausage
1/2 pound of bacon
2 pounds of cooked stewed corn
2 spoonfuls of chopped white onion
2 cloves of garlic
1/2 cup of toasted peanuts
1 liter of milk
2 spoonful of oil with achiote
3 cups of water

Preparation:

Cook the meat in a pot. Then retire it from the broth,
allow it to cool and cut it in small pieces. In
another pot heat the oil, add the garlic, the salt and
the cumin, then add the cooked stewed corn, the peanut
and the milk and later the broth. Allow all this to
cook stirring until it thickens. Add the meat later
cook for another 5 minutes and retire from the fire.

Adorn with egg slices.

MOTE PILLO

Ingredients:

" mote" = homeny : boiled white corn
eggs
onion
butter
salt

Preparation:

First put butter in a big pan, next add chopped onions after that put the
eggs, stewed sweet corn and salt, finally, mix and cook on a low fire.

QUIMBOLITOS (for 18 persons)

(Achira is the big leaf of a plant that is especially used for the
preparation of steamed dough)

Ingredients :

4 ounces of white corn flour
4 ounces of wheat flour
6 eggs
6 ounces of grated cheese
6 ounces of butter
6 ounces of sugar
1 ounce of raisins
1 glass of brandy
1 spoonful of baking powder
18 "achira leaves"

Preparation :

Mix the butter with the sugar in a bowl, add the grated cheese and the egg
yolks until the preparation is foamy. Add the glass of brandy and
later slowly add the the formerly sifted and mixed flours and baking powder.
Beat this mixture very well and smoothly add the with the foamy, whipped egg whites.

Put a spoonful of this dough in each "achira leaf" that has been dried, in
the center put some raisins and wrap the leaf around the mixture.

Steam during approximately half an hour.

ROASTED MEAT WITH MENESTRA

Ingredients :
3 pounds of meat (beef or pork)
2 pounds of beans
salt
pepper
2 onions
red lard
garlic
water.

Preparation of the meat :

First, cut the meat in long pieces. Next, put the meat in a bowl to marinade
with salt, pepper and garlic for 20 minutes.
After that, put some charcoal in the broiler and light the charcoal.
Finally, put the meat on the broiler until roasted.

Preparation of the menestra :

First, in a pan put 3 cups of water. Then, put 2 pounds of beans with a
spoon of garlic and cook for 30 minutes.
Next, cut 2 onions in small slices in a pan and put some red lard.
After that, put the beans in the pan and cook for another 20 minutes.

Serve this with rice.

SANCOCHO

Ingredients :

4 corn husks
1 1/2 pound of beef
4 spoons of butter
1 small green pepper
4 carrots
1/2 pound of beans
2 onions
4 cloves of garlic
salt, pepper, cumin.

Preparation :

First, marinade the beef with salt, pepper and cumin. You must cut the beef
in bits and then cook it.
then in other clean pot put and fry the butter, onions, garlic, carrots,
rice, salt, pepper and cumin, for 10 minutes and mix them with a big wood
spoon.

Next add the corn and the beef in the same pot where you fried the butter,
onions, and the other ingredients, until they cook, well.

Finally, cut the onions and green pepper, and put them in the sancocho.

TAMALES

Ingredients :

1 pound of cheese
1 gallon of ground corn kernels
3 eggs
12 ounces of butter
2 spoons of salt
1/2 litre of boiled water.
Achira leaves

Preparation:

Add the corn to the boiled water with the salt, eggs, butter and corn. Mix this in a bowl and finally put parts of the dough in an achira leave. Stuff the dough with some cheese and steam for 20 minutes.

TOASTED WHITE CORN

The type of corn that we use to make "Toasted White
Corn" grows in the valleys near Cuenca such as Paute,
Chaullabamba, etc.

Ingredients :

1/2 pound of white corn kernels
1/4 litre of hot water
2 tablespoons of lard
2 cloves of garlic
1 green onion
1 pinch of baking soda
1/4 tablespoon of salt (for the water)

Preparation:

Wash the corn kernels in cold water. Place in a large frying
pan on the stove, with the hot water, the cloves of
garlic, the onion, a little bit of salt and the baking
soda in it. Then, add the corn and cook it over a low fire
until the water evaporates. After that, add the lard
and stir with a wood spoon.
Leave it to brown and when it starts to pop cover the
frying pan with a lid. Stir from time to time.
Then, put the toasted white corn in a bowl and cover
it with absorbent paper. After that, sprinkle more
salt and mix the corn.

TORTILLAS DE MAIZ (CORN CAKE)

Ingredients :

5 corn husks
1 egg
3 spoons of butter
1 cup of flour
salt
sugar
cheese

Preparation :

First separate the kernels from the corn cob, and grind the grains for
until almost smooth, after that add the egg, butter, flour, salt, and
sugar and mix all the ingredients. After this make little balls with
your hands from the dough and put a piece of cheese in the
middle of each ball. Then smash them until they are flat. Finally fry them in
a frying pan until they get golden brown.
